Chocolate Gravy? It Makes Perfect Sense in Arkansas

HOT SPRINGS, Ark. — Some foods just sound logical. Consider roast pork, apple pie, ripe tomatoes, and sweet corn. But chocolate gravy? If you’re from Arkansas, that sounds perfectly logical – and delicious when you crave a breakfast treat.

Kristie Rosset credits her Arkansas son-in-law with making her a convert to the unusual concept of chocolate gravy, and for years the sweet treat pleased her guests at the Lookout Point Lakeside Inn when she owned that Hot Springs retreat.

Rosset says presentation is easy – just ladle it over fresh biscuits, homemade or store-bought, although homemade biscuits just have to be better. Here’s the recipe from “8 Broads in the Kitchen,” a cookbook Rosset and seven of her culinary pals wrote. They also have a website, 8Broads.com.

Ingredients: 1 stick butter; 4 tablespoons cocoa; 4 tablespoons flour; ¾ cup sugar; 2 cups milk

Instructions: Melt butter. Stir in cocoa and flour, then add sugar and milk, and whisk. Cook over medium heat until thick, stirring often.

Oh, and remember to bake those biscuits.
